Serves: 4

  • 2 Twinings Earl Grey Tea bags
  • 500ml boiling water
  • 500ml Sparkling water
  • Small piece fresh ginger, finely sliced
  • 1 star anise
  • 1 sprig mint
  • Ice to serve


  1. Pour the boiling water over the tea bags and allow it to draw for 4 minutes, remove the bags and allow the tea to cool down, once cool place the tea into the refrigerator to chill.
  2. Add the sparkling water, ginger, star anise and mint, allow it to fuse for 10 minutes.
  3. Fill the glasses with ice and fill the glass with iced tea.
