- 2 Ryvita
- 1 small handful salad greens
- Veggies of your choice, steamed
- 20ml ricotta cheese crumbled
- 10ml lemon juice
- ½ teaspoon poppy seeds
- 15ml olive oil
- Salt and pepper to taste
- Arrange the salad greens onto the Ryvita. Place the veggies onto the greens
- Top with the ricotta. Mix the lemon juice, poppy seeds and olive oil together and sprinkle over the veggies.
- Season to taste. Serve immediately.
